- Slice 2 pounds of chicken thighs into ½-inch strips, seed and slice the 2 red bell peppers and 1 green bell pepper into ½-inch strips, and halve and slice the yellow onion into ½-inch strips. 10 min
- In a small bowl, combine 2 teaspoons chili powder, 1½ teaspoons ground cumin, 1 teaspoon smoked paprika, ¾ teaspoon garlic powder, ½ teaspoon dried oregano, 1¼ teaspoons kosher salt, and ½ teaspoon black pepper. 3 min
- Spread the chicken strips, bell peppers, and onion on the sheet pan, drizzle with 3 tablespoons olive oil, sprinkle the spice blend evenly over everything, and toss until fully coated. 4 min
- Spread the mixture into a single layer and roast on the top rack for 22–25 minutes, until the chicken is cooked through and the peppers and onions are lightly charred at the edges. 24 min
- Remove the pan from the oven, drizzle 2 tablespoons fresh lime juice over the chicken and vegetables, and toss to coat. 2 min
- Scatter ¼ cup roughly chopped fresh cilantro over the pan and serve with lime wedges on the side. 2 min
Warm Flour Tortillasbase
- Warm the 12 flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in foil and place in the oven during the last 10 minutes of the chicken's roasting time. 8 min
- Wrap the warmed tortillas in a clean kitchen towel to keep them soft and pliable until serving.

- Combine the diced tomatoes, white onion, jalapeño, and 2 tablespoons finely chopped fresh cilantro in a bowl and stir to mix. 2 min
- Set out ½ cup sour cream in a small bowl, and if using, add 1 cup shredded Mexican cheese blend to a separate bowl for the table. 2 min
