Grilled Bratwurst and Peppers
- Seed and slice the 2 red bell peppers and 1 yellow bell pepper into ½-inch strips, then halve and slice the yellow onion into ½-inch strips. 7 min
- In a large bowl, toss the sliced peppers and onion with 2 tablespoons olive oil, ¾ teaspoon kosher salt, ½ teaspoon black pepper, ¼ teaspoon garlic powder, and ¼ teaspoon smoked paprika until evenly coated. 3 min
- Preheat a gas or charcoal grill to medium-high heat (about 400°F), or heat a grill pan over medium-high for 3 minutes. 5 min
- Place the seasoned peppers and onion in a grill basket or on a sheet of foil directly on the grill grates and cook, tossing occasionally, for 10–12 minutes until softened and lightly charred. 12 min
- Timing-sensitive step. Lay the 4 bratwurst sausages on the grill grates and cook, turning every 3–4 minutes, for 12–15 minutes total until the internal temperature reaches 160°F and the casings are nicely browned. 14 min
- Transfer the bratwurst to a plate and rest for 3 minutes before serving alongside the charred peppers and onions. 3 min
Warm Pretzel Rollsbase
- Heat the oven to 325°F. 5 min
- Slice each of the 4 pretzel rolls in half horizontally and spread the cut sides lightly with the 1 tablespoon softened unsalted butter. 3 min
- Place the buttered rolls cut-side up on a baking sheet and warm in the oven for 6–8 minutes until heated through and the cut sides are just golden. 7 min
- Remove the rolls from the oven and sprinkle the cut sides with ½ teaspoon flaky sea salt before serving.
Whole-Grain Mustard Dipping Saucesauce
- Stir together 4 tablespoons whole-grain mustard, 1 teaspoon honey, and ½ teaspoon apple cider vinegar in a small bowl until combined. 2 min
- Taste and adjust with a touch more honey or vinegar as preferred, then transfer to a small serving dish alongside the bratwurst and rolls.
